Instructions
1. Prepare the Beef Filling
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3–4 minutes, until softened. Add the minced garlic and cook for another 30 seconds.
Add the ground beef and break it apart with a wooden spoon. Cook until browned and completely cooked through, about 6–8 minutes. Drain excess grease if necessary.
Stir in the ketchup, mustard, Worcestershire sauce, salt, black pepper, and smoked paprika. Cook for another 1–2 minutes so the flavors can combine.
Remove the skillet from the heat and allow the beef mixture to cool slightly. Stir in the shredded cheddar cheese and chopped pickles. The cheese should begin melting into the warm beef, creating a rich, flavorful filling.
2. Prepare the Ravioli
Place a pasta sheet on a lightly floured work surface. If using homemade pasta dough, roll it very thin. Fresh refrigerated pasta sheets can also be used for convenience.
Place small spoonfuls of the cheeseburger filling several inches apart on the pasta sheet. Avoid overfilling because the ravioli can split during cooking.
Brush the exposed pasta around each filling mound with beaten egg. Place another pasta sheet over the top, gently pressing around each mound to remove trapped air.
Cut the ravioli into individual squares using a ravioli cutter, pizza cutter, or sharp knife. Press the edges firmly with your fingers or a fork to create a secure seal.
Place the finished ravioli on a lightly floured baking sheet. Continue until all the filling has been used.
3. Make the Cheeseburger Sauce
Melt the butter in a saucepan over medium heat. Sprinkle in the flour and whisk continuously for about 1 minute.
Gradually pour in the milk while whisking to prevent lumps. Cook for 2–3 minutes until the mixture begins to thicken.
Reduce the heat to low and add the cheddar cheese and cream cheese. Stir until smooth and creamy. Add ketchup, mustard, and garlic powder.
Taste and season with salt and black pepper. For a stronger burger flavor, add a little extra mustard or Worcestershire sauce.
4. Cook the Ravioli
Bring a large pot of salted water to a gentle boil. Carefully add the ravioli in batches, making sure not to overcrowd the pot.
Fresh ravioli usually cooks quickly, often in about 3–5 minutes. When the ravioli float to the surface and the pasta is tender, remove them with a slotted spoon.
Avoid boiling them too aggressively because the pasta edges may separate and the filling can escape.
Transfer the cooked ravioli directly into the warm cheeseburger sauce. Gently toss to coat.
Serving Suggestions
Spoon the creamy cheeseburger ravioli onto serving plates and top with extra shredded cheddar cheese. Add chopped dill pickles for a bright, tangy contrast.
For an extra indulgent version, sprinkle crispy crumbled bacon over the top. Chopped green onions or parsley add freshness and a little color.
You can also drizzle the finished ravioli with burger sauce made from mayonnaise, ketchup, mustard, and finely chopped pickles.
Serve immediately while the pasta and sauce are hot and creamy.
Helpful Tips
Don’t overfill the ravioli: A small amount of filling makes sealing much easier and prevents the pasta from bursting.
Remove air pockets: Gently press around the filling before sealing the ravioli. Trapped air can cause them to split while cooking.
Cool the filling: Let the beef mixture cool slightly before assembling. Very hot filling can soften the pasta and make it difficult to work with.
Use good-quality cheese: Sharp cheddar provides a stronger cheeseburger flavor, while mild cheddar creates a softer, creamier result.
Make ahead: Uncooked ravioli can be arranged on a floured baking sheet and refrigerated for several hours. For longer storage, freeze them in a single layer before transferring them to a freezer-safe container.
Variations
For a bacon cheeseburger ravioli, add finely chopped crispy bacon to the beef and cheese filling.
For a spicy version, mix diced jalapeños into the filling and add a pinch of cayenne pepper to the sauce.
For a mushroom cheeseburger ravioli, sauté finely chopped mushrooms with the onions before adding the beef.
You can also replace cheddar with American cheese for an especially classic fast-food cheeseburger flavor.
