Instructions
1. Prepare the Chicken
Start by patting the chicken dry with paper towels. Cut it into bite-sized pieces, approximately 1 to 1½ inches each. Keeping the pieces similar in size helps them cook evenly.
Place the chicken in a large bowl and season with salt, black pepper, garlic powder, and paprika. Toss thoroughly so every piece is seasoned.
In a separate bowl, whisk together the eggs and cold water. In another bowl, combine the cornstarch, flour, and baking powder.
Dip each piece of chicken into the egg mixture, allowing excess to drip off. Then transfer it to the flour and cornstarch mixture. Toss and press gently so the coating sticks well.
