These soft, juicy blueberry-filled oat bars are a delicious combination of a tender buttery oat crust, sweet-tart blueberry filling, and a lightly crisp golden topping. They are simple to prepare, wonderfully comforting, and perfect for breakfast, an afternoon snack, or an easy homemade dessert.
The blueberries become wonderfully jammy as they bake, while the oat mixture develops a delicate crispness around the edges and on top. Unlike some oat bars that can become dry or crumbly, these stay soft and moist in the center thanks to the juicy fruit filling.
Ingredients
For the Blueberry Filling
- 2½ cups fresh or frozen blueberries
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- Pinch of salt
For the Oat Mixture
- 1½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup packed light brown sugar
- ¼ cup granulated sugar
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ¾ cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Pan
Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some parchment hanging over the sides. This makes the finished bars much easier to lift from the pan.
Lightly grease the parchment and the exposed sides of the pan. Set it aside while preparing the filling and oat mixture.
2. Make the Blueberry Filling
Place the blueberries in a medium saucepan. Add the sugar, lemon juice, lemon zest, cornstarch, vanilla extract, and a small pinch of salt.
Cook over medium heat, stirring gently, until the blueberries begin to release their juices. Continue cooking for approximately 4–6 minutes, stirring occasionally, until the mixture becomes glossy and slightly thickened.
If using frozen blueberries, there is no need to thaw them first, although the filling may take a minute or two longer to thicken.
Remove the saucepan from the heat and allow the filling to cool slightly. It should be juicy and spoonable rather than completely firm.
3. Prepare the Oat Crumble
In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking powder, salt, and cinnamon. Stir until all the dry ingredients are evenly distributed.
Pour in the melted butter and vanilla extract. Mix with a fork or spatula until the ingredients form a moist, crumbly mixture.
The mixture should hold together lightly when pressed but should still have some loose crumbs. This texture creates the perfect contrast between the soft fruit center and lightly crisp oat topping.
4. Form the Bottom Layer
Set aside about one-third of the oat mixture for the topping.
Pour the remaining mixture into the prepared baking pan. Press it firmly and evenly into the bottom using your fingers, the back of a spoon, or the bottom of a measuring cup.
Make sure the corners are well covered and the base is reasonably even. A firmly packed bottom layer helps the bars hold together after baking.
5. Add the Blueberries
Spoon the slightly cooled blueberry filling over the oat base. Spread it gently into an even layer, leaving a small border around the edges if possible.
Avoid pressing too firmly because you do not want to disturb the crust underneath.
The filling should cover most of the surface and create a generous layer of juicy blueberries in every bar.
6. Add the Topping
Take the reserved oat mixture and scatter it evenly over the blueberry filling. Some areas can remain slightly exposed because the blueberries bubbling through the topping create a beautiful homemade appearance.
For a slightly crunchier top, gently press a few larger oat clusters together before scattering them across the filling.
7. Bake
Place the pan in the preheated oven and bake for approximately 35–42 minutes.
The bars are ready when the top is lightly golden and the edges are set. You should also see the blueberry filling bubbling gently around some areas of the oat topping.
Do not worry if the center looks slightly soft when it first comes out of the oven. The filling will continue to set as the bars cool.
8. Cool Completely
Allow the bars to cool in the pan for at least 1 hour. For cleaner slices, let them cool completely before cutting.
Use the parchment paper to lift the entire slab from the pan. Place it on a cutting board and use a sharp knife to cut it into squares or rectangles.
For especially neat slices, refrigerate the cooled bars for 30–60 minutes before cutting.
Helpful Tips
Fresh blueberries work beautifully in this recipe, but frozen blueberries are equally convenient. If using frozen berries, cook the filling slightly longer so excess moisture can evaporate.
Fresh lemon juice and zest add brightness that balances the sweetness of the blueberries and oat mixture. Do not skip the lemon zest if you have a fresh lemon available.
Use old-fashioned rolled oats rather than quick oats for the best texture. Rolled oats provide more chewiness and help create the lightly crisp topping.
Allowing the bars to cool completely is important. Cutting them while hot can cause the blueberry filling to spread and make the bars difficult to handle.
For an extra tender texture, avoid overbaking. The oat topping should be lightly golden rather than deeply browned.
Variations
You can easily customize these bars by adding a handful of chopped almonds, pecans, or walnuts to the oat mixture. A little shredded coconut can also add pleasant texture.
For a mixed-berry version, replace part of the blueberries with raspberries, blackberries, or strawberries. You can also add a small pinch of cardamom or extra cinnamon for a warmer flavor.
For a simple finishing touch, drizzle cooled bars with a thin vanilla glaze made from powdered sugar, vanilla extract, and a little milk.
Serving and Storage
These blueberry oat bars are delicious at room temperature, but they are especially good slightly chilled or gently warmed. Serve them with coffee or tea for breakfast or an afternoon snack. They also make a lovely dessert with a scoop of vanilla ice cream or a spoonful of whipped cream.
Store the bars in an airtight container in the refrigerator for up to 5 days. You can also freeze them individually for up to 2–3 months. Thaw refrigerated or at room temperature before serving.
