Slow Cooker Rotisserie Chicken is an easy way to make tender, juicy chicken packed with savory herbs and spices. Instead of using a store-bought rotisserie chicken, you can prepare a whole chicken at home with simple pantry seasonings and let the slow cooker do most of the work.
The chicken cooks gently until the meat is exceptionally tender and easy to pull from the bone. A flavorful blend of paprika, garlic, onion, herbs, salt, and pepper creates that familiar rotisserie-style taste. While the slow cooker does not naturally produce deeply crisp skin, a quick finish under the broiler can give the chicken a beautiful golden exterior.
This recipe is perfect for Sunday dinner, meal preparation, sandwiches, salads, wraps, soups, and countless leftover meals.
Ingredients
- 1 whole chicken, approximately 4–5 pounds
- 2 tablespoons olive oil
- 2 teaspoons paprika
- 1½ teaspoons garlic powder
- 1½ teaspoons onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika, optional
- ½ teaspoon dried parsley
- 1 lemon, halved
- 4 cloves garlic, lightly crushed
- 1 small onion, quartered
- ½ cup chicken broth
- Fresh parsley, for garnish
Instructions
1. Prepare the Chicken
Remove the chicken from its packaging and take out any giblets from the cavity. Pat the entire chicken thoroughly dry with paper towels.
Drying the chicken is important because it helps the seasonings adhere to the skin and encourages better browning if you finish the chicken under the broiler.
Place the chicken breast-side up on a clean work surface.
2. Make the Seasoning
In a small bowl, combine paprika, garlic powder, onion powder, thyme, rosemary, oregano, salt, black pepper, smoked paprika, and dried parsley.
Add the olive oil and mix until the seasonings form a thick, fragrant paste.
Rub the mixture generously over the entire chicken. Make sure to cover the breast, thighs, legs, wings, and sides.
If desired, gently loosen the skin over the breast with your fingers and rub a little seasoning underneath. This adds extra flavor directly to the meat.
3. Fill the Cavity
Place the lemon halves, crushed garlic cloves, and quartered onion inside the chicken cavity.
These aromatics release their flavor as the chicken cooks and help create a delicious savory aroma.
4. Prepare the Slow Cooker
Pour the chicken broth into the bottom of a large slow cooker.
Place the seasoned chicken breast-side up into the slow cooker. The chicken should fit comfortably with the lid able to close securely.
There is no need to completely cover the chicken with liquid. The chicken will release additional juices as it cooks.
5. Slow Cook
Cover the slow cooker with its lid.
Cook on LOW for approximately 5–7 hours, depending on the size of the chicken and your slow cooker. Begin checking the chicken toward the lower end of the cooking range.
The chicken is done when the thickest part of the breast and thigh reaches at least 165°F (74°C) on a reliable food thermometer.
Avoid relying only on cooking time because whole chickens vary considerably in size.
6. Rest the Chicken
Once fully cooked, carefully remove the chicken from the slow cooker. It will be very tender, so a large spatula or two sets of tongs can make transferring it easier.
Place the chicken on a cutting board or serving platter.
Allow it to rest for approximately 10–15 minutes before carving. Resting allows the juices to redistribute through the meat, helping keep the chicken moist.
7. Crisp the Skin
For classic rotisserie-style golden skin, transfer the chicken carefully to a foil-lined baking sheet.
Brush the skin lightly with some of the juices from the slow cooker.
Place the chicken under a preheated broiler for approximately 3–5 minutes, watching it carefully the entire time.
The skin should become golden and lightly crisp. Broilers vary significantly, so do not walk away while the chicken is under the heat.
This step is optional. The chicken will still be delicious without it.
8. Carve and Serve
Use a sharp knife to separate the legs and thighs from the body. Remove the breasts and slice them against the grain.
Arrange the chicken on a serving platter and garnish with fresh parsley.
You can spoon a little of the flavorful cooking liquid over the meat before serving.
Helpful Tips
Choose a chicken that fits comfortably inside your slow cooker. A chicken that is too large may cook unevenly or prevent the lid from sealing properly.
Patting the chicken dry before seasoning helps the spice mixture stick better. It also helps the skin brown more effectively during the optional broiling step.
For even more flavor, season the chicken several hours ahead of cooking and refrigerate it covered. Bring it out while the slow cooker is being prepared.
Do not add excessive liquid. Slow cookers trap moisture, and the chicken naturally releases plenty of juices during cooking.
Always check the internal temperature rather than relying exclusively on the clock. The thickest part of the meat should reach 165°F (74°C).
If you want crisp skin, the broiler is the best finishing method. Slow-cooked chicken skin tends to remain soft because of the moist cooking environment.
Serving Suggestions
Serve Slow Cooker Rotisserie Chicken with mashed potatoes, roasted vegetables, green beans, corn, rice, or a crisp garden salad.
The leftovers are incredibly versatile. Shred the chicken and use it in tacos, quesadillas, sandwiches, wraps, soups, casseroles, pasta dishes, or chicken salad.
You can also save the cooking juices and use them as a flavorful base for gravy or soup.
Storage
Remove leftover chicken from the bones and place it in an airtight container. Refrigerate promptly and use within 3–4 days.
For longer storage, shredded chicken can be frozen in freezer-safe containers or bags for up to several months. Divide it into meal-sized portions so it is easy to thaw when needed.
When reheating, add a small splash of broth or water to help prevent the meat from drying out.
