Ingredients
For the Shrimp
- 1½ pounds large shrimp, peeled and deveined
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- 1 tablespoon olive oil
- 2 tablespoons butter
For the Creamy Garlic Parmesan Sauce
- 4 tablespoons butter
- 5 cloves garlic, finely minced
- 1 tablespoon all-purpose flour
- 1½ cups heavy cream
- ½ cup chicken or vegetable broth
- 1 cup freshly grated Parmesan cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon red pepper flakes, optional
- ½ teaspoon black pepper
- Salt, to taste
- 2 tablespoons chopped fresh parsley
Optional Additions
- 2 cups baby spinach
- 1 cup sliced mushrooms
- ½ cup sun-dried tomatoes
- 1 tablespoon fresh lemon juice
Instructions
1. Prepare the Shrimp
Pat the shrimp dry with paper towels. Removing excess moisture helps them brown properly instead of releasing too much liquid into the pan.
Place the shrimp in a bowl and season with salt, black pepper, Italian seasoning, and paprika. Toss until evenly coated.
Use large or extra-large shrimp if possible because they remain juicy and tender while cooking. Smaller shrimp can also be used, but they will require less cooking time.
2. Sear the Shrimp
Heat a large skillet over medium-high heat. Add the olive oil and two tablespoons of butter.
Once the butter melts and begins to foam, add the shrimp in a single layer. Avoid overcrowding the pan; cook in batches if necessary.
Cook the shrimp for approximately 1–2 minutes on the first side, then flip and cook for another 1–2 minutes. They should become pink, opaque, and lightly golden around the edges.
Do not worry about cooking them completely at this stage because they will finish cooking in the sauce.
Transfer the shrimp to a clean plate and set aside.
3. Start the Garlic Parmesan Sauce
Reduce the heat to medium and add four tablespoons of butter to the same skillet.
Once melted, add the minced garlic. Cook for approximately 30–60 seconds, stirring constantly, until fragrant.
Be careful not to brown the garlic too much because burnt garlic can make the sauce bitter.
Sprinkle the flour over the butter and garlic. Whisk continuously for about 1 minute. This creates a simple roux that helps thicken the sauce.
4. Add the Cream
Slowly pour the heavy cream into the skillet while whisking. Add the broth and continue whisking until the mixture becomes smooth.
Allow the sauce to simmer gently for approximately 2–4 minutes. Do not bring it to a rapid boil, as high heat can cause a cream-based sauce to separate.
Add the Italian seasoning, black pepper, and red pepper flakes if using.
5. Add the Parmesan
Reduce the heat to low and gradually add the freshly grated Parmesan cheese. Stir continuously until the cheese melts into the cream and creates a smooth, rich sauce.
Freshly grated Parmesan generally melts more smoothly than pre-shredded cheese.
Taste the sauce and add salt if necessary. Remember that Parmesan and seasoned shrimp already contain salt, so add it gradually.
If the sauce becomes too thick, stir in a small splash of broth or cream until it reaches your preferred consistency.
6. Add Optional Vegetables
If using spinach, mushrooms, or sun-dried tomatoes, add them to the sauce before returning the shrimp.
For spinach, stir in the leaves and cook for 1–2 minutes until wilted.
For mushrooms, sauté them separately or add them earlier to the skillet and cook until tender.
Sun-dried tomatoes can be stirred directly into the sauce for a sweet, tangy flavor that complements the creamy Parmesan beautifully.
7. Return the Shrimp
Place the cooked shrimp back into the skillet along with any juices that collected on the plate.
Gently stir to coat the shrimp with the sauce. Cook for another 1–2 minutes, just until the shrimp are fully cooked and heated through.
Avoid overcooking. Shrimp are done when they are opaque and firm with a slight curve. Overcooked shrimp can become rubbery.
Finish with chopped fresh parsley and, if desired, a small squeeze of fresh lemon juice. The acidity helps balance the richness of the cream and Parmesan.
Serving Suggestions
Creamy Garlic Parmesan Shrimp is incredibly versatile.
For a classic dinner, spoon the shrimp and sauce over cooked fettuccine, linguine, spaghetti, or penne. Toss the pasta directly into the sauce so every strand becomes coated.
You can also serve it over fluffy white rice, brown rice, mashed potatoes, or cauliflower rice.
Crusty garlic bread is another excellent choice. It is perfect for dipping into the creamy Parmesan sauce.
For a complete meal, add steamed broccoli, roasted asparagus, green beans, or a simple green salad.
Helpful Tips
Use fresh shrimp: Fresh or properly thawed frozen shrimp both work well, but always remove excess moisture before cooking.
Don’t overcook the shrimp: Shrimp require only a few minutes. They should be removed from the pan while you prepare the sauce.
Grate Parmesan yourself: Freshly grated cheese melts more evenly and produces a smoother sauce.
Keep the heat moderate: Gentle cooking helps prevent the cream from separating.
Adjust the sauce: Add more broth to thin it or a little additional Parmesan to thicken it.
Add lemon at the end: A small amount of lemon juice brightens the dish without overpowering the garlic and Parmesan.
Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to three days.
When reheating, place the shrimp and sauce in a skillet over low heat. Add a splash of cream, milk, or broth and stir gently until warmed through.
Avoid boiling the sauce during reheating because excessive heat can cause the cream and cheese to separate.
For the best texture, cook only as much shrimp as you plan to eat immediately and prepare fresh shrimp when possible.
